Vegetable Fritters

Ingredients:
  • 1 chopped onion
  • 1 cup cooked spinach or peas
  • salt and pepper to taste
  • 1 tbsp curry powder
  • 1 beaten egg
  • 2 tbsp flour
Mix all of the ingredients in a bowl.
Fry spoonfuls of the mix in olive oil for a few minutes on each side until browned.
serve as a snack or side dish.
